Coconut & Cashew Chicken

1 packet of Passage to India Sri Lankan -

   Coconut & cashew chicken Simmer sauce

1 Can drained chick peas

1 medium diced sweet potato

1 sliced leek

1 large chopped tomato

1 cup green peas


4 chicken thighs cut into pieces

Method:  Brown chicken (if using)

Sauté Vegies in a little oil

Add simmer sauce and cook on a low heat

until veg tender and chicken cooked through

Serve with basmati rice

Some Greek yogurt with chopped mint added

And a bowl of Pataks mini pappadums

A handful of cashews are nice too
