Zucchini and Corn Fritters

Grate 2 Zucchini & place in a clean cloth (Chux) & squeeze out liquid, then place in a bowl

Take1 fresh cob of corn - run knife down to remove corn & add to zucchini.

Add a good shake of onion salt & chilli flakes to taste along with some white pepper.

Add 3/4cup of SR flour,

2 eggs & enough milk to make a stiff batter.

Gently fry large tablespoons of mixture in olive oil until golden & cooked through

Serve with sweet chilli sauce & sour cream - garnish with coriander
