Home Style Fried Eggs


1 1/2 cups veg oil

4 large free range eggs

1tbls. Oyster sauce

Pinch white pepper

1/2 cup finely sliced eshallots

Sliced red chilli. To taste



Method

Heat oil in wok or fry pan till shimmering

Crack all eggs into bowl

Gently ease the eggs into hot oil. (Stand back)

After 1 minute lower heat allowing underside to become firm and crisp

Keeping yolks runny

Carefully slide spatula under eggs and pour off the oil into separate bowl

Replace eggs and allow to crisp further

Gently remove eggs and drain any excess oil

Serve in a wide bowl or dish

Drizzle with oyster sauce, shallots and chilli with pepper
